My Story
Hi to everyone who has made their way to our EE site. What a blessing it is to us to have you here. I’m Ellie. I am the founder and owner of Eating, Elevated. If you're clicking on this bio, I suppose it is because you want to know a little more about me and my crazy antics!
From a personal perspective: I have the most amazing husband and 5 beautiful, crazy, amazing, wild, adventurous kids that we are working to raise to be faith filled, self aware, joyful, kind, respectful, and all those things… while working to break free from generational trauma & sins. Some days are easier than others 🤪. My Catholic faith is, and always has been at the center of what I do. Even when it comes to healing. I like to combine the principles of science, faith and education to create digestible info you can understand and relate to.
From a health perspective: From a very young age, I was frequently sick. Getting strep throat as much as a few times a year. Constantly treated with antibiotics. Fast forward to my teens, terrible skin with deep and painful pimples. I was placed on a prescription, which also was an antibiotic. Through this time I had anxiety, gut issues, and panic attacks. I knew there had to be a better way. Around that time, being sick and tired of being sick and tried, I realized the power of food as fuel and as a way to heal the body, which is what lead me to nutrition as my major. After graduation and after having my first child, I began realizing that conventional medicine was not working for me. But it was all I knew! Where did I go from here?! Through family, our family was blessed to be introduced to a Nutrition Response Testing Practitioner.
My life before Nutrition Response Testing was full of digestive issues, skin issues, anxiety, chronic inflammation, sicknesses with each winter, my “usual sinus infections” and feeling exhausted all the time. Poor sleeping, poor nutrition. Feeling crummy all the time. But that was “My Normal”. I lived with it because I knew... everyone has those issues.
With Muscle Testing and getting back to a more primitive way of living, eating and moving, my health has never been better. And in the days I do feel off, I know just what to do.
When it comes to my life I like to combine the principles of science, faith and education to create digestible info you can understand and relate to when is what has ultimately led me away from seeing clients in a 1:1 setting, which I know I could be content with for the rest of my days, and I have stepped into a larger platform of the virtual world where I can help more people find the healing God has in store for them.
I fully believe the body can heal in the right conditions. So I seek to create that at all costs not just for myself but for others. We have opened a restaurant in the heart of our home town @homegrown_stm that doesn’t cook in/use inflammatory oils, uses high quality proteins from agricultural sources that are sustainable and follow primitive principles. I am obsessed with good food and good company.
From an education perspective: I Graduated from the University of Minnesota with my Undergraduate Degree in Nutrition, and Graduated December 2023 summa cum laude with my masters degree in integrative health with a trauma focus… 39 weeks pregnant. I have worked in the world of functional health for 7 years now and have built an amazing business @eating_elevated with three locations across Minnesota - growth and scaling is hard and humbling! The journey hasn’t been easy, but I have an amazing team.
My Life motto is: "Give it to God, hit the gas."
