Ellie Anderson
Hi to everyone who has made their way to our EE site. What a blessing it is to us to have you here. I’m Ellie. I am the founder and owner of Eating, Elevated.
If you're clicking on this bio, I suppose it is because you want to know a little more about me and my crazy antics!
From a personal perspective: I have the most amazing husband and 5 beautiful, crazy, amazing, wild, adventurous kids that we are working to raise to be faith filled, self aware, joyful, kind, respectful, and all those things… while working to break free from generational trauma & sins. Some days are easier than others 🤪. My Catholic faith is, and always has been at the center of what I do. Even when it comes to healing. I like to combine the principles of science, faith and education to create digestible info you can understand and relate to.
From a health perspective: From a very young age, I was frequently sick. Getting strep throat as much as a few times a year. Constantly treated with antibiotics. Fast forward to my teens, terrible skin with deep and painful pimples. I was placed on a prescription, which also was an antibiotic. Through this time I had anxiety, gut issues, and panic attacks. I knew there had to be a better way. Around that time, being sick and tired of being sick and tried, I realized the power of food as fuel and as a way to heal the body, which is what lead me to nutrition as my major. After graduation and after having my first child, I began realizing that conventional medicine was not working for me. But it was all I knew! Where did I go from here?! Through family, our family was blessed to be introduced to a Nutrition Response Testing Practitioner.
My life before Nutrition Response Testing was full of digestive issues, skin issues, anxiety, chronic inflammation, sicknesses with each winter, my “usual sinus infections” and feeling exhausted all the time. Poor sleeping, poor nutrition. Feeling crummy all the time. But that was “My Normal”. I lived with it because I knew... everyone has those issues.
With Muscle Testing and getting back to a more primitive way of living, eating and moving, my health has never been better. And in the days I do feel off, I know just what to do.
When it comes to my life I like to combine the principles of science, faith and education to create digestible info you can understand and relate to when is what has ultimately led me away from seeing clients in a 1:1 setting, which I know I could be content with for the rest of my days, and I have stepped into a larger platform of the virtual world where I can help more people find the healing God has in store for them.
I fully believe the body can heal in the right conditions. So I seek to create that at all costs not just for myself but for others. We have opened a restaurant in the heart of our home town @homegrown_stm that doesn’t cook in/use inflammatory oils, uses high quality proteins from agricultural sources that are sustainable and follow primitive principles. I am obsessed with good food and good company.
From an education perspective: I Graduated from the University of Minnesota with my Undergraduate Degree in Nutrition, and Graduated December 2023 summa cum laude with my masters degree in integrative health with a trauma focus… 39 weeks pregnant. I have worked in the world of functional health for 7 years now and have built an amazing business @eating_elevated with three locations across Minnesota - growth and scaling is hard and humbling! The journey hasn’t been easy, but I have an amazing team.

I have been with Eating, Elevated. now for almost 4 years. Our mission and finding root cause healing has been the catalyst for my love for EE and our clients here!

My excitement for Nutrition Response Testing and Natural Healing stems from a few different avenues. First and foremost, my own experience with Nutrition Response Testing. I came to Ellie a couple of years ago, thinking I *mostly* felt good. I suffered from minor but frequent headaches a few times a week and I had dealt with this since college, but truthfully, I started to get used to it. Other than that, I had a pretty good idea of what a healthy diet looked like and I honestly thought that was my only issue. Well, I was wrong. Within days of starting my program my energy levels were significantly higher, I slept better than I could ever remember, my gut regulated, and within just a few weeks the headaches vanished. No more bloating, no more midday walls, no more digestive discomforts, hello best self! Remember when I thought headaches were my only problem? The most freeing part of Nutrition Response Testing is the ability to know your body so well. If I’m feeling off, I can pinpoint exactly what is going on and correct it!
My passion also comes from being a wife and a mother. Once my heart began walking around outside of my body my interest in a more holistic approach to healing grew deeper. Nutrition Response Testing has helped heal my children quickly and, most importantly, safely.
Gone are the days of test results with no answers and band-aid prescriptions. Health truly is wealth and I am so overjoyed to be able to share true wellness with as many people as we can!

Courtney Fehn
I’ve been enjoying helping people heal through God’s work. My husband's family got me interested in holistic health. I watched a video on parasites and knew I had them. At the time I wanted to know nothing about parasites but recognized they needed to go. I loved the nutrition response testing approach to healing and knew I wanted to be a part of peoples healing health journey. Since becoming a wife and mom, being more aware of what we put in and on our bodies has been a priority for our family. NRT has not only helped me but my husband and kids.
Katie Jaster
As a registered nurse, I embarked on a journey to find deeper healing through holistic health as I navigated my own gut issues. Witnessing the limitations of conventional medicine in addressing root causes, I delved into holistic approaches that treat the whole person—mind, body, and soul. Now, as a holistic practitioner, I integrate my nursing expertise with holistic modalities to help others uncover and address the underlying factors contributing to their health challenges. My passion lies in empowering individuals to achieve true wellness by addressing the root cause of their health issues. I'm dedicated to supporting you through your health journey. Whether it's gut issues, skin problems, sleep troubles, fatigue, hormone imbalances, headaches, or any other concerns, I'm here to listen, connect the dots, and help you uncover the root cause. Together, we'll work towards healing so you can feel your best, because you ARE worth it!
Education: Bachelors of Science degree in nursing with a minor in Psychology in 2007 and am a certified Nutrition Response Testing Practitioner.

Liz Miller
I have been on my own holistic journey since 2014. Over the years, I have dealt with a variety of symptoms including postpartum anxiety, severe stomach aches, dyshidrotic eczema, loose stools, and dizziness. I was referred to EE as a client in 2020 and it changed my life. God opened the door for me to become a practitioner at Eating, Elevated in 2022. I have also been a Registered Nurse since 2013. I believe holistic health doesn't have to be all or nothing. There is a time and a place for western medicine, but it is definitely not our first stop. We are all at a different place in our healing journey and I am happy to meet you where you are at. I love educating and supporting my clients to make small changes so they can take control of their health and improve their quality of life.
Outside of work, I enjoy spending time with my husband, our three kids and our dog. We love playing sports, going to the cabin and being surrounded by people we love.

Cassi Swenson
Hello, I’m Cassi! I am a faith-filled Catholic, empathetic, passionate, human-science nerd! I believe in God’s incredible design of the human body for His glory, and in His healing graces! I have great empathy for those suffering in their health and looking for answers!
My journey with holistic health began when my oldest daughter was three years old; I quickly learned, through her early years, conventional medicine did not have the answers I was looking for. Hello all!! My name Camryn and I have been with Eating, Elevated for three years now and I am blessed to be a practitioner here. I have been a client of Ellie's since March 2021, and I am so glad I found her. Ellie was able to identify the root cause of my acne and stomach troubles. She has not only helped me with my acne and gut, but she has also improved my entire health. In 2024, I completed my Masters of Functional and Integrative Nutrition; the body can heal when given the appropriate nutrition!
Working with the EE team has completely changed my outlook on what my body needs to function at its best. I have found my passion working with such a well-rounded group of women. I have always had a desire to help people with their health and well-being and this has given me that opportunity to do so. Hailey Wilson
Hello! My name is Hailey! I am so excited to be a part of the EE community and work with you. My health journey began in high school when I struggled with stomach issues, acne, mental health, and weight. Through changing my diet to whole, real foods everything began to resolve, and I felt the best I ever had. This inspired me to major in nutrition in college and pursue functional medicine in grad school. Shortly before finishing grad school, I began to experience poor sleep, lack of energy, unexplained weight gain, and terrible cycle irregularities with no explanation as to why. This is when I found EE and started learning about deeper stressors the body encounters and is burdened by. EE has played such a huge role in my husband and I's healing, and I am excited to help you and your family feel better ! I love working with families, kiddos, and teens and women struggling with their cycle, but mostly I love helping anyone get back to feeling like themselves again!
Annamarie Charmoli
Hi! My name is Annamarie and I’m privileged to be a practitioner here at EE! My own health journey has taken many turns, but it mostly started in high school. I was always tired, experienced poor gut health, had horribly painful periods, and felt like I was living in a high cortisol state constantly. I was diagnosed with iron deficiency anemia and IBS and, even after running tests and going through procedures, no one could give me answers as to why this was happening. I tried different supplements and medications, to no avail.
Things only got worse in college. My inflammation and IBS were at an all time high and then I got very sick with COVID and everything was exacerbated. I experienced long-term symptoms, including excruciating heart pains that would come on randomly. I couldn’t figure out what the root cause was and neither could the doctors. I went in multiple times to get EKG’s, X-rays, blood tests, etc. and everything came back normal. I was even told at one point that the heart pains could just be anxiety and that I should just “try breathing differently”. I felt very unvalidated and defeated.
At the end of college I heard of a job-opening at EE and, through prayerful discernment, decided to give it a shot, even though I was extremely skeptical of NRT. My whole first week of working here I thought about quitting multiple times because I was so skeptical. But, every time I asked a question there was always a logical answer based in science. As someone who studied nursing and psychology, I greatly appreciated that and got on board with holistic healing when I saw and heard so many testimonies from clients. I have also experienced a lot of my own healing through holistic health and I am VERY passionate about helping others in this way as well! I truly believe in our body’s God-given innate ability to heal itself when given the right things, so I’m hopeful to see you on my schedule so we can get you the healing you deserve!!
